Step

In a large, heavy-bottomed saucepan or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, garlic, and celery and sauté until the onion is softened and translucent, about 5-7 minutes.

Add the textured vegetable protein (TVP), chili beans, stewed tomatoes, vegetable broth, brown sugar, chili powder, salt, and pepper to the saucepan. Stir well to combine.

Bring the mixture to a simmer, then reduce the heat to low. Cover and let simmer for at least 30 minutes, or up to an hour, stirring occasionally. This allows the flavors to meld and the TVP to fully hydrate. (30-60 minutes)

Taste and adjust the seasoning as needed. Add more salt, pepper, or chili powder to your preference.

Serve hot, garnished with your favorite toppings such as vegan cheese, chopped cilantro, sour cream, or a dollop of vegan yogurt.

For a richer flavor, consider adding a tablespoon of tomato paste or a dash of smoked paprika.
Feel free to experiment with different types of beans, such as kidney beans, black beans, or pinto beans.
This chili is even better the next day, as the flavors have more time to develop.
To make this chili spicier, add a pinch of cayenne pepper or a chopped jalapeño pepper along with the other vegetables.
If you don't have brown sugar, maple syrup can be used as a substitute.
