In a medium bowl, combine the grated Parmesan cheese, panko bread crumbs, crumbled feta cheese, and chopped fresh parsley. Mix well.

Remove the puff pastry from the freezer. Spread half of the cheese mixture evenly over the puff pastry, leaving a 1-inch border around the edges. Layer the cooled onion mixture over the cheese mixture.

Gently pat the drained tomato slices dry with paper towels and arrange them artfully over the onion layer. Sprinkle the remaining cheese mixture over the tomato layer. Fold the edges of the puff pastry over the tomatoes, pleating as needed to create a rustic border. Lightly brush the exposed pastry with the beaten egg to promote browning.

Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and puffed. Remove from oven and sprinkle with fresh basil leaves. Let cool on the baking sheet for 10-15 minutes before slicing and serving.

Use a variety of colorful heirloom tomatoes for a visually stunning galette.
If you don't have fresh thyme, 1 teaspoon of dried thyme can be substituted.
