Preheat the oven to 450 degrees F (230 degrees C). (5 minutes)

Pierce the potato several times with a fork. Place onto a microwave-safe plate and microwave on high until tender but not mushy, approximately 10 minutes. Transfer the potato to a baking sheet.

Bake in the preheated oven until the skin is crisp and the potato is fully cooked through, about 15 minutes.

While the potato is baking, melt the butter in a saucepan over medium heat. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 5 minutes. Stir in the chopped mushrooms and season with sea salt. Reduce the heat to low, cover, and cook without stirring until the mushrooms are tender and have released their moisture, about 5 minutes. Remove from the heat.

Carefully remove the potato from the oven. Slice the potato lengthwise, being careful not to cut all the way through. Gently squeeze the ends of the potato to open it up. Top generously with the sautéed onion-mushroom mixture, and finish with a dollop of Greek yogurt.

For an extra layer of flavor, consider adding a pinch of dried thyme or rosemary to the mushrooms while they are sautéing.
If you prefer a richer flavor, substitute sour cream for the yogurt.
To make this a complete meal, serve alongside a simple green salad or steamed green beans.
