In a food processor, combine the luncheon meat, hard-cooked eggs, cheddar cheese, and chopped onion. Process until finely minced. (Time: 3 minutes)

Transfer the mixture to a bowl and stir in the mayonnaise until well combined and the mixture holds together. (Time: 2 minutes)

Spoon equal amounts of the mixture onto the open hamburger bun halves. Arrange two bacon pieces on top of each burger. (Time: 5 minutes)

Place the burgers on a baking sheet and broil a few inches from the heat for 5 to 8 minutes, or until the bacon is crisp and the burger is heated through. Watch carefully to prevent burning. (Time: 5-8 minutes)

For a spicier kick, add a pinch of red pepper flakes to the luncheon meat mixture.
Feel free to substitute your favorite cheese for the cheddar. Gruyere or pepper jack would also be excellent.
If you don't have a food processor, you can finely chop the ingredients by hand, though it will take a bit longer.
Serve with your favorite burger toppings, such as lettuce, tomato, and pickles.
