Preheat a grill to high heat. Ensure skewers are soaking in water. (5 minutes)

Nestle a strip of jalapeño into each butterflied shrimp. Envelop the shrimp with a piece of bacon, then thread onto a skewer, piercing the shrimp once through the head and once through the tail, ensuring the bacon is secure. Aim for about 6 shrimp per skewer, leaving a small space between each to promote even bacon cooking. Generously season both sides of the shrimp with Cajun seasoning. (20 minutes)

Lightly oil the grill grate. Place the shrimp skewers on the grill and cook for 2 to 3 minutes on one side. Flip, and immediately top each shrimp with a slice of Monterey Jack cheese. Continue cooking for another 2 to 3 minutes, or until the bacon is beautifully browned and the cheese is gloriously melted. (5 minutes)

For easier skewering, chill the shrimp for 15 minutes before assembling the brochettes.
Adjust the amount of Cajun seasoning to your preferred level of spice.
If grilling isn't an option, these can also be baked in a preheated oven at 400°F (200°C) for approximately 12-15 minutes, or until the bacon is cooked through.
Serve immediately for the best flavor and texture.
