Follow The Directions

01

Step

Preheat your oven to 400 degrees F (200 degrees C). (5 minutes)

02

Step

Cut four 12x15-inch sheets of parchment paper. Fold each in half widthwise and reopen to create a crease. (2 minutes)

03

Step

In a mixing bowl, combine the rice, olives, chicken broth, orange juice, orange zest, salt, and pepper. Mix well to ensure even distribution of flavors. (3 minutes)

04

Step

Spoon approximately 3/4 cup of the rice mixture onto one side of each parchment rectangle, positioning it near the crease. Neatly arrange the shrimp evenly over the rice. (5 minutes)

05

Step

Drizzle 1 teaspoon of extra-virgin olive oil over each pile of shrimp. Top each with a thin slice of orange. (2 minutes)

06

Step

Carefully fold the empty half of the parchment paper over the shrimp filling. Crimp the edges together with overlapping folds to create a tightly sealed packet. This ensures the steam remains trapped inside, cooking the shrimp perfectly. (7 minutes)

07

Step

Arrange the sealed packets closely together on a baking sheet. (2 minutes)

08

Step

Roast in the center of the preheated oven until the shrimp are tender and opaque, approximately 15 to 17 minutes. To check for doneness, carefully unfold one edge of a packet (avoiding the escaping steam!) and peek inside. (15-17 minutes)

09

Step

Once cooked, carefully open the packets, again being cautious of the hot steam. Slide the shrimp and rice mixture into individual serving bowls. (3 minutes)

10

Step

Garnish generously with chopped toasted almonds and fresh parsley for added texture and flavor. Serve immediately and enjoy! (2 minutes)

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the rice mixture.
If you don't have parchment paper, aluminum foil can be used as a substitute, though parchment paper is preferred for easier cleanup.
Feel free to experiment with other ingredients such as sun-dried tomatoes, artichoke hearts, or different types of olives to customize the dish to your liking.
