For an extra layer of flavor, consider grilling the shrimp before dicing. A quick sear adds a smoky depth. If you don't have fresh herbs on hand, dried herbs can be substituted. Use about 1/3 of the amount of fresh herbs called for. To toast the almonds, spread them in a single layer on a baking sheet and bake in a preheated oven at 350°F (175°C) for 5-7 minutes, or until lightly golden. Watch them carefully to prevent burning. Feel free to add a pinch of red pepper flakes to the tzatziki sauce for a touch of heat.
