Follow The Directions

01

Step
2 mins

Engage the Sauté function on your multi-functional pressure cooker (like an Instant Pot). Introduce the butter and herb-infused olive oil to the pot. (2 minutes)

02

Step
7 mins

Once melted and shimmering, add the bite-sized chicken. Shower with garlic granules and dried oregano. Sauté, stirring occasionally, until the chicken is beautifully golden brown. (5-7 minutes)

03

Step
3 mins

Pour in the chicken broth, ensuring you scrape up any flavorful browned bits clinging to the bottom of the pot with a wooden spoon. Stir in the farfalle pasta and heavy whipping cream. Gently nestle the spinach and sun-dried tomatoes on top. Hit Cancel to stop saute function. (3 minutes)

04

Step
15 mins

Secure the lid, ensuring it's properly locked. Select high pressure according to the manufacturer's instructions and set the timer for 10 minutes. Allow 10-15 minutes for the pressure to build within the pot. (10-15 minutes)

05

Step
15 mins

Once the timer signals completion, perform a natural pressure release for 15 minutes, according to the manufacturer's instructions. Quick-release any remaining pressure. Carefully unlock and remove the lid. (15 minutes)

06

Step
2 mins

Stir in the freshly shaved Parmesan cheese until it melts into a luscious sauce. Garnish with soffrito seasoning and additional Parmesan cheese, if desired. Serve immediately and savor! (2 minutes)

For an even richer flavor, consider browning the chicken in batches to avoid overcrowding the pot.
Fresh garlic can be used in place of garlic granules. Use 2-3 cloves, minced.
If you don't have soffrito seasoning blend, a pinch of red pepper flakes and a dash of dried basil can be substituted.
Adjust the amount of Parmesan cheese to your preference. For a tangier flavor, add a squeeze of lemon juice at the end.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
