Pour in 3 cups of vegetable broth and the heavy whipping cream. In a separate bowl, whisk the remaining 1 cup of broth into the Greek yogurt until smooth, then pour this mixture into the Dutch oven. Stir in the chopped sun-dried tomatoes.

Cook the orzo uncovered, stirring frequently, over medium heat until it is tender but still has a slight bite, approximately 15-20 minutes. Adjust the heat if the mixture is simmering too rapidly.

Gently stir in the shrimp and fresh spinach. Continue cooking until the shrimp turns pink and opaque and the spinach wilts, about 4 minutes. Taste and adjust the seasoning with salt and pepper as needed.

For a richer flavor, use chicken broth instead of vegetable broth.
If you don't have a Tuscan herb blend, use a combination of dried basil, oregano, rosemary, and thyme.
Feel free to add other vegetables such as zucchini or bell peppers.
Be careful not to overcook the shrimp, as it can become rubbery.
Garnish with a sprinkle of grated Parmesan cheese for an extra touch of decadence.
