Follow The Directions

Preheat your oven to 350 degrees F (180 degrees C). Lightly grease a 3-quart baking dish with nonstick cooking spray. (Prep time: 5 minutes)

Bring a large pot of salted water to a rolling boil. Add the mafalda noodles and cook according to package directions for the minimum recommended time. Drain the pasta and transfer it to a large mixing bowl. (Cook time: 8-10 minutes)

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion, sliced carrots, and celery. Cover and cook, stirring occasionally, until the carrots are just tender. (Cook time: 5-8 minutes). Add the sliced zucchini and minced garlic. Cook and stir for 1 minute more, until fragrant. (Cook time: 1 minute)

Add the cooked carrot mixture, rinsed kidney beans, cannellini beans, diced tomatoes (with Italian herbs), frozen green beans, tomato sauce, 1/4 cup of grated Parmesan cheese, Italian seasoning, salt, and black pepper to the bowl with the cooked pasta. Stir everything together thoroughly to ensure all ingredients are well combined. (Prep time: 5 minutes)

Transfer the pasta mixture to the prepared baking dish. Cover the dish tightly with aluminum foil. Bake in the preheated oven for 20 minutes. (Bake time: 20 minutes)

Remove the foil from the baking dish. Sprinkle the shredded mozzarella cheese evenly over the top of the casserole. Continue baking until the casserole is heated through and the mozzarella cheese is melted and bubbly. (Bake time: 10-15 minutes)

Remove the casserole from the oven and let it rest for a few minutes before serving. Garnish each serving with the remaining Parmesan cheese and a sprinkle of fresh basil and/or oregano, if desired. (Rest time: 5 minutes)

For a richer flavor, consider using homemade tomato sauce or adding a splash of red wine to the vegetable mixture while cooking.
Feel free to substitute other types of beans or vegetables based on your preference and what you have on hand.
To prevent the pasta from becoming too soft, be sure to cook it al dente and avoid overcooking it during the baking process.
If you don't have mafalda noodles, you can use other small pasta shapes like ditalini, elbow macaroni, or small shells.
This casserole is also delicious served with a side of crusty bread for soaking up all the flavorful sauce.
