Heat the remaining 1 tablespoon of vegetable oil in the same wok over medium-high heat. Add the chicken in a single layer (you may need to do this in batches to avoid overcrowding). Cook undisturbed for 3 minutes to allow the chicken to brown. (Cook time: 3 minutes)

Flip the chicken and continue cooking, breaking up any large pieces, until evenly browned and cooked through, about 3-4 minutes more. Ensure an instant-read thermometer inserted into the center of a chicken piece reads at least 165°F (74°C). (Cook time: 4 minutes)

Return the asparagus and onion to the wok. Whisk the lemon sauce mixture again to ensure the cornstarch is fully incorporated, then pour it over the chicken and vegetables, scraping up any browned bits from the bottom of the pan. (Prep time: 1 minutes)

Stir constantly until the sauce comes to a simmer and thickens, about 1-2 minutes. Season with additional salt and pepper to taste. (Cook time: 2 minutes)

For a richer flavor, marinate the chicken in the cornstarch, salt, and pepper mixture for at least 30 minutes before cooking.
Adjust the amount of red pepper flakes to your preferred level of spiciness.
If you don't have fresh lemon zest, you can use 1/2 teaspoon of dried lemon peel.
