Preheat the oven to 325 degrees F (165 degrees C).

In a large bowl, combine the rolled oats, quick-cooking oats, pecans, walnuts, almonds, and pepitas. Mix until evenly distributed. Spread the mixture evenly on a baking sheet.

Bake in the preheated oven for 10 minutes. Remove from the oven and transfer the contents back to the large bowl. Reduce oven temperature to 225 degrees F (110 degrees C).

In a medium bowl, whisk together the maple syrup, melted coconut oil, crystallized ginger, turmeric, ground ginger, cinnamon, salt, cardamom, and black pepper until well combined. Pour this mixture over the oat-nut mixture in the large bowl and stir thoroughly to coat.

Spread the coated granola mixture evenly onto the baking sheet.

Bake in the oven for 30 minutes. Turn the oven off and leave granola in the oven for 1 hour.

Remove from the oven and let cool to room temperature, approximately 30 minutes. This allows the granola to crisp up further.

For extra flavor, toast the nuts lightly before adding them to the mixture.
Adjust the amount of ground ginger to suit your preference. Start with the recommended amount and add more if desired.
Store the cooled granola in an airtight container at room temperature for up to 2 weeks.
