In a large bowl, whisk together the apricot preserves, eggs, melted butter, sugar, vanilla extract, and salt until smooth. Gently fold in the cottage cheese and cooked egg noodles, ensuring they are evenly coated with the apricot mixture. Spoon the mixture into the prepared baking dish. (10 minutes)

Bake in the preheated oven until the center of the kugel is set and lightly golden, about 50 minutes. Remove the kugel from the oven and evenly distribute the shredded Cheddar cheese over the top. Return to the oven and bake until the cheese is melted, browned, and bubbling, about 10 minutes. (60 minutes)

Remove from the oven and let the kugel rest for 10 minutes before serving. This allows the kugel to set slightly and the flavors to meld together. (10 minutes)

For a richer flavor, use brown butter instead of melted butter.
If you prefer a less sweet kugel, reduce the amount of sugar by 1/4 cup.
Feel free to experiment with different types of cheese, such as Gruyere or Monterey Jack.
The kugel can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking. Add an extra 10-15 minutes to the baking time if baking from cold.
