Follow The Directions

01

Step

In a large resealable plastic bag, combine 1/4 cup olive oil, lemon juice, salt, and black pepper. Seal the bag and gently massage to combine. Add shrimp, remove excess air, and seal again. Ensure shrimp are thoroughly coated, then marinate in the refrigerator for 30 to 45 minutes.

02

Step

Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, approximately 4 to 5 minutes. Drain the pasta thoroughly.

03

Step

Preheat an outdoor grill for medium-high heat. Place a large, heat-proof skillet on one side of the grill.

04

Step

Remove shrimp from the marinade; shake off any excess. Discard the remaining marinade. Thread the shrimp onto metal skewers.

05

Step

Place shrimp skewers onto the grill grate. Grill until the shrimp turn opaque, about 2 to 3 minutes per side. Remove from the grill and set aside.

06

Step

Add 2 teaspoons of oil to the skillet. Add the sliced red onion and cook, stirring occasionally, until softened, around 2 to 3 minutes. Add the diced tomatoes, minced garlic, and red pepper flakes; continue to cook and stir for another 1 to 2 minutes. Pour in the white wine and cook until reduced by about half, approximately 4 minutes. Stir in the heavy cream and cook for 1 minute. Season with salt and black pepper to taste. Gently toss in the cooked pasta and grilled shrimp to combine. Sprinkle with fresh parsley before serving.

For an extra layer of flavor, consider adding a splash of clam juice or seafood stock to the tomato sauce while it reduces.
Be careful not to overcook the shrimp; they should be opaque and slightly firm to the touch.
If you don't have a grill, you can sauté the shrimp in a skillet with a little olive oil until cooked through.
