Step

Preheat the oven to 325 degrees F (165 degrees C). Line a large, rimmed baking sheet with parchment paper. (5 minutes)

In a large bowl, combine the oats, pecans, almonds, and coconut flakes. Set aside. (2 minutes)

In a medium saucepan over medium heat, whisk together the vegetable oil, brown sugar, honey, maple syrup, cinnamon, vanilla extract, and salt. Stir gently until the mixture begins to simmer, then remove from heat. (5 minutes)

Pour the wet ingredients over the oat mixture and fold gently until all dry ingredients are evenly coated. Spread the granola in an even layer on the prepared baking sheet. (5 minutes)

Bake in the preheated oven for 20 minutes. Stir the granola and continue to bake on the top rack until golden brown, approximately 5 minutes more. (25 minutes)

Remove from the oven and let the granola cool completely on the baking sheet, about 20 to 30 minutes. (30 minutes)

Once cooled, gently toss the granola with the dried cranberries. Store in an airtight container at room temperature. (5 minutes)

For a richer flavor, toast the nuts and coconut flakes in a dry skillet over medium heat for a few minutes before adding them to the oat mixture. Watch carefully to prevent burning.
Feel free to experiment with other dried fruits, such as raisins, chopped apricots, or cherries.
Add a tablespoon of chia seeds or flaxseed meal to the oat mixture for an extra boost of nutrients.
The granola will crisp up as it cools. Be sure to let it cool completely before storing to prevent it from becoming soggy.
Serve with your favorite yogurt, milk, or as a topping for ice cream. It's also delicious on its own as a trail mix!
