For the lightest, crispiest batter, ensure your beer is ice-cold. This helps to prevent the gluten in the flour from over-developing.
Do not overcrowd the skillet when frying the shrimp. This will lower the oil temperature and result in soggy shrimp.
Serve immediately with your favorite dipping sauce, such as sweet chili sauce, or a homemade mango salsa.
