Continue simmering until the vegetables are tender and the consommé reaches your desired consistency. (20 minutes)

Reduce the heat to low to keep the consommé warm while you prepare the tacos.

To make the tacos: Heat some reserved beef fat in a large skillet over medium heat until melted and shimmering.

Dip two tortillas into the melted beef fat, ensuring they are generously coated on both sides. Briefly toast the tortillas in the fat until they turn a beautiful golden brown.

Cover each tortilla with a generous amount of freshly grated Monterey Jack cheese and shredded beef birria.

Drizzle each taco with approximately 1 tablespoon of the flavorful consommé liquid. Top with chopped white onion and fresh cilantro.
