If you don't have fresh rosemary or thyme, you can substitute with dried herbs. Use about 1 teaspoon of dried rosemary and 1/2 teaspoon of dried thyme.
To prevent the chicken from drying out, you can add a tablespoon of chicken broth or white wine to the baking dish before baking.
