Step

Prepare the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until just tender, about 5-7 minutes. Drain well. (5-7 minutes)

Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, 1 teaspoon of lemon zest, capers, and anchovy paste. Season with salt and pepper to taste. (3 minutes)

Combine and Serve: In a large bowl, toss the drained cauliflower with the dressing. Add the Parmesan cheese and chopped thyme. Toss until the cauliflower is evenly coated. Serve immediately, garnished with additional Parmesan cheese and a sprinkle of lemon zest, if desired. (5 minutes)

For a richer flavor, brown the cauliflower florets in a skillet with a little olive oil before tossing with the dressing.
If you don't have anchovy paste, you can use finely minced anchovy fillets. Be sure to rinse them first to remove excess salt.
This dish is best served immediately, but it can be prepared ahead of time and reheated gently.
