Follow The Directions

01

Step

In a bowl, combine the softened butter, 1/2 clove minced garlic, thyme, basil, salt, and pepper. (5 minutes)

02

Step

Place the butter mixture on a piece of wax paper and roll it tightly to form a log. Refrigerate until firm. (2 hours)

03

Step

Lay a bacon strip flat on a piece of wax paper. Place a chicken thigh on top of the bacon and sprinkle with some of the remaining minced garlic. Open up the chicken thigh. Place 1 to 2 teaspoons of the cold butter mixture in the middle of the chicken thigh. Tuck one end of the bacon into the middle of the chicken thigh. Fold over the chicken thigh and roll the bacon around the thigh. Repeat with the remaining thighs and bacon. (20 minutes)

04

Step

Preheat an air fryer to 370 degrees F (190 degrees C). (5 minutes)

05

Step

Place the chicken thighs in the basket of the air fryer and cook until the chicken is no longer pink and the juices run clear, about 25 minutes. An instant-read thermometer inserted in the center of the thighs should read 165 degrees F (74 degrees C). (25 minutes)

For best results, ensure the butter log is thoroughly chilled before stuffing the chicken thighs. This will prevent the butter from melting too quickly during cooking.
Don't overcrowd the air fryer basket; cook the chicken thighs in batches if necessary to ensure even browning and crisping of the bacon.
Feel free to experiment with different herbs and spices in the butter mixture to customize the flavor profile to your liking. Rosemary, oregano, or paprika would be delicious additions.

Instead of a butter log, I mixed the butter in a bowl and just spooned it onto the chicken. Worked perfectly fine!

I didn't have thyme or basil, so I used Italian seasoning instead, and it still turned out great!

I was skeptical about using the air fryer, but it cooked the bacon perfectly crispy. Definitely a new favorite!

Next time, I will add a little chili flakes to the butter for a bit of a kick.

The cooking time was spot-on. My chicken was cooked through but not dry at all.
