Deceptively delicious and utterly satisfying, these vegetarian meatballs are a culinary chameleon. Serve them as a hearty main course, or transform them into irresistible cocktail bites with your favorite sauce.

Follow The Directions

Step

Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet. (5 minutes)

In a large bowl, combine the eggs, bread crumbs, walnuts, Cheddar cheese, onions, cottage cheese, oil, garlic, basil, and salt. Use your hands to thoroughly blend the ingredients until a very stiff batter forms. (10 minutes)

Cover the bowl and chill the mixture in the refrigerator for 1 to 2 hours to allow the flavors to meld and the mixture to firm up. (120 minutes)

Once chilled, roll the mixture into 1-inch balls. Place the meatballs on the prepared baking sheet. (15 minutes)

Bake in the preheated oven for 8 minutes, then turn the meatballs and continue to bake for another 8 minutes, or until golden brown and cooked through. (16 minutes)

For a richer flavor, try using a combination of different cheeses, such as Parmesan or Gruyere.
Feel free to experiment with different herbs and spices. Oregano, thyme, or red pepper flakes would all be great additions.
These meatballs can be made ahead of time and frozen for later use. Simply bake as directed, let cool completely, and then freeze in a single layer on a baking sheet before transferring to a freezer bag.
Serve with your favorite marinara sauce, pesto, or creamy mushroom sauce.
