Pour remaining vegetable stock into the tomato mixture. Sprinkle in adobo seasoning and sazon. Bring to a boil. Add potatoes and kale; cook until potatoes are tender. (Approximately 10 to 15 minutes)

For a richer flavor, consider using smoked paprika instead of regular paprika.
Adjust the amount of chipotle pepper to control the level of spiciness.
Serve with a drizzle of high-quality olive oil and a sprinkle of fresh parsley for an elegant presentation.
