In a large saucepan, whisk together 1 1/2 cups granulated sugar and cornstarch. Gradually stir in warm water. Cook over medium heat, stirring constantly, until the mixture becomes clear and thick. Remove from heat and stir in the peach flavored gelatin mix until dissolved. (15 minutes)

Gently fold the sliced peaches into the gelatin mixture. Carefully spread the peach mixture over the cream cheese layer. (5 minutes)

Top with the remaining 12 ounce container of thawed whipped topping, creating swirls or desired design. Cover and refrigerate for at least 1 hour to allow the pie to set. (60 minutes refrigeration)

For a richer flavor, use brown butter in the crust.
If fresh peaches aren't available, you can use frozen or canned peaches, but be sure to drain them well.
Garnish with extra chopped pecans or fresh peach slices before serving for an elegant touch.
