Step

Soak the Chickpeas: Place chickpeas in a large bowl and cover with cold water. Let soak for 8 hours to overnight. (8+ hours)

Cook the Chickpeas: Drain and rinse chickpeas under running cold water. Place in a large pot, cover with several inches of water, and bring to a boil. Reduce heat and simmer until chickpeas are soft. Drain. (60-75 minutes)

Sauté Aromatics: While chickpeas are cooking, heat oil in a large pot over medium heat. Add onions and cook until soft and translucent. Stir in garlic and cook until fragrant. Add cardamom pods, chile peppers, coriander seeds, turmeric, and mustard seeds and toast. Mix in tomato paste. (Approximately 7 minutes)

Simmer Vegetables: Stir butternut squash and carrots into the pot. Add enough water to cover vegetables halfway. Simmer over low heat, partially covered, until all the vegetables are soft. Add more water if curry gets too dry. (25-35 minutes)

Combine and Serve: Mix in cooked chickpeas shortly before serving and heat until warm. Serve sprinkled with fresh cilantro. (5 minutes)

For a richer flavor, consider using coconut oil instead of vegetable oil.
Adjust the amount of chili peppers to your spice preference.
Feel free to add other vegetables like bell peppers or spinach for added nutrients and flavor.
If you don't have dried chickpeas, canned chickpeas work just as well. Just reduce the cooking time.
A dollop of vegan yogurt or a squeeze of lime juice adds a refreshing touch to the finished dish.
