Follow The Directions

01

Step
8 hrs

Soak Almonds and Dates: In separate bowls, submerge the raw almonds and the pitted dates in water. Ensure both are fully covered. Allow them to soak at room temperature for a minimum of 8 hours, or ideally overnight. (Soak Time: 8-12 hours)

02

Step
5 mins

Rinse and Prepare: After soaking, thoroughly drain the almonds and rinse them under cold water to remove any residue. Retain the date-soaking water; this flavorful liquid can be added later to adjust the sweetness of your almond milk. (Prep Time: 5 minutes)

03

Step
2 mins

Blend to Perfection: In a high-powered blender, combine the soaked almonds, vanilla bean, pitted dates, and a pinch of sea salt. Add 3 cups of fresh, filtered water. Blend on high speed for 1 minute until a creamy mixture forms. Allow the mixture to sit for 1 minute to let the foam subside. (Blend Time: 2 minutes)

04

Step
1 mins

Fine-Tune and Blend Again: Introduce the remaining 1 cup of filtered water, along with a splash of the reserved date water, to achieve your desired level of sweetness. Blend again until the almond milk reaches a perfectly smooth consistency. (Blend Time: 1 minute)

05

Step
5 mins

Strain for Silky Smoothness: Place a nut milk bag inside a large measuring cup or bowl. Gently pour the blended almond milk into the bag, lift, and allow it to drain naturally. To extract the maximum amount of milk, gently squeeze the bag. (Strain Time: 5 minutes)

06

Step
2 hrs

Chill and Serve: Transfer the freshly made vanilla almond milk to an airtight container and store it in the refrigerator. It will keep for up to 5 days, ready to be enjoyed in your favorite recipes or savored on its own. (Chill Time: 2 hours)

For a richer vanilla flavor, consider scraping the seeds from the vanilla bean into the blender, in addition to adding the whole bean.
Adjust the amount of dates according to your sweetness preference. Start with less and add more after tasting.
If you don't have a nut milk bag, you can use a cheesecloth, but be prepared for a slightly less smooth texture.

The vanilla bean really elevates the flavor. I'm never going back to the artificial stuff!
