Follow The Directions

01

Step

In a large bowl, toss the chicken wings with olive oil until evenly coated. (5 minutes)

02

Step

Generously coat the wings with your chosen dry rub, ensuring every surface is covered. (5 minutes)

03

Step

Prepare your smoker, bringing the internal temperature to between 170°F and 200°F (77°C to 93°C). Follow the manufacturer's instructions for your specific smoker model. (30 minutes)

04

Step

Drain the soaked mesquite wood chips. Place half of them directly onto the hot charcoal. (2 minutes)

05

Step

Arrange the wings evenly on the smoker's cooking grate, skin-side down, ensuring they are not overcrowded for optimal smoke penetration. (5 minutes)

06

Step

Smoke the wings for approximately 1 hour, allowing them to absorb the smoky flavors.

07

Step

Flip the wings and add the remaining soaked wood chips to the charcoal to maintain a consistent smoke. (2 minutes)

08

Step

Continue smoking for another hour, or until an instant-read thermometer inserted near the bone registers 165°F (74°C). (60 minutes)

09

Step

Remove the smoked chicken wings from the smoker and let them rest for a few minutes before serving. (5 minutes)

10

Step

Serve immediately with your favorite blue cheese dressing for dipping.

For a crispier skin, consider increasing the smoker temperature slightly during the last 30 minutes of cooking.
Experiment with different wood chips to find your preferred smoke flavor profile. Applewood or hickory are also excellent choices.
If you don't have a smoker, you can adapt this recipe for a grill using indirect heat. Create a cool zone on one side of the grill and maintain a similar temperature range.
The dry rub can be adjusted to your liking. For a spicier kick, add cayenne pepper or chili powder.
