Follow The Directions

01

Step
50 mins

Combine garbanzo beans and vegetable broth in your Instant Pot®. Secure the lid, ensuring the valve is set to sealing. Select the 'Pressure Cook' or 'Manual' setting on high pressure and set the timer for 35 minutes. (Total time including pressure build-up: 45-50 minutes)

02

Step
5 mins

Once the cooking cycle is complete, carefully perform a quick pressure release according to your Instant Pot®'s instructions (approximately 5 minutes). Be cautious of the escaping steam.

03

Step
0 mins

Strain the cooked garbanzo beans, reserving 2/3 cup of the cooking liquid. This liquid gold will contribute to the perfect creamy texture.

04

Step
3 mins

In a food processor, combine the drained garbanzo beans, lemon juice, tahini, olive oil, and garlic. Process until a smooth paste forms, about 3 minutes, pausing to scrape down the sides of the bowl as needed.

05

Step
1 mins

Add the reserved 2/3 cup of cooking liquid, cumin, and salt to the food processor. Blend for another minute until the hummus is perfectly smooth and emulsified. Taste and adjust seasonings as needed.

For an extra layer of flavor, try toasting the cumin seeds in a dry pan for a minute or two before grinding them.
If your hummus is too thick, add a tablespoon of ice water at a time while blending until you reach your desired consistency.
Serve with warm pita bread, fresh vegetables, or as a spread for sandwiches and wraps. A drizzle of olive oil and a sprinkle of paprika make for an attractive presentation.
Store leftover hummus in an airtight container in the refrigerator for up to 5 days.
