Prepare the Slow Cooker: Line a slow cooker with a slow cooker liner or grease lightly with cooking spray. (5 minutes)

Layer and Infuse: Arrange the yam pieces evenly in the bottom of the slow cooker. Pour in the water and pineapple juice. Sprinkle the brown sugar evenly over the yams. Distribute the butter cubes across the top. Drizzle with vanilla extract, and then sprinkle with cinnamon and nutmeg. Gently stir to combine the sauce ingredients. (10 minutes)

First Slow Cook: Cover and cook on Low heat for 2 hours. After 2 hours, stir the yams gently to redistribute the sauce. (2 hours)

Thicken the Glaze: In a small bowl, whisk together the cornstarch and water until smooth to create a slurry. Pour the cornstarch slurry into the slow cooker and stir gently to incorporate it evenly. (5 minutes)

Final Slow Cook: Cover and continue to cook on Low heat until the yams are fork-tender and the sauce has thickened into a luscious glaze, about 1 hour more. (1 hour)

Serve: Serve hot, spooning the glaze generously over the yams. These can be made ahead and reheated.

For a deeper caramel flavor, use dark brown sugar.
A pinch of ground cloves or ginger can be added for extra warmth.
If you don't have pineapple juice, apple juice or orange juice can be substituted.
If the sauce is too thin at the end of the cooking time, remove the lid and cook on High for 15-30 minutes to allow it to reduce and thicken.
Serve with a sprinkle of chopped pecans or walnuts for added texture.
