Prepare the butter mixture: In a small bowl, combine the melted butter, garlic salt, white pepper, lime zest, and half of the lime juice. (5 minutes)

Prepare the grill pan: Place 2 tablespoons of water in the rear and front of a Countertop Induction Oven grill pan (if using). Place salmon skin-side down on the grill pan, with the thickest part of the salmon toward the center of the pan. (2 minutes)

Brush and Bake: Brush the butter mixture evenly over the salmon. Slide the grill pan into position in the oven. Close the door and press "Auto Cook." Select the fish setting, 3, and press "Start." Turn the dial to select 2 pounds and press "Start" again. (3 minutes)

Prepare the mango sauce: In a separate bowl, stir together the remaining lime juice, mango chutney, and sriracha sauce. (2 minutes)

Add the mango glaze: When there are 4 minutes remaining on the timer, slide the grill pan out. Pour the mango mixture evenly over the salmon. Slide the grill pan back in place, close the door, and continue cooking until salmon flakes easily with a fork, about 2 to 4 minutes more. (6 minutes)

Garnish and Serve: Remove the salmon from the oven and transfer to a serving platter. Garnish with fresh cilantro. Serve immediately. (2 minutes)

For best results, use high-quality mango chutney. Adjust the amount of sriracha to your preferred level of spiciness.
If you don't have a Countertop Induction Oven, you can bake the salmon in a conventional oven at 375°F (190°C) for 12-15 minutes, or until cooked through.
This dish pairs well with rice, quinoa, or a simple green salad.
