Follow The Directions

01

Step

Preheat oven to 375 degrees F (190 degrees C). (5 minutes)

02

Step

In a large casserole dish, spread the cubed spaghetti squash and chopped onion. Drizzle with olive oil, then season generously with salt and pepper. (5 minutes)

03

Step

Bake in the preheated oven until the squash is tender and easily mashed, approximately 45 minutes. Remove from oven and mash the squash and onion mixture with a fork or potato masher. (50 minutes)

04

Step

In a large bowl, combine the mashed squash mixture with the beaten eggs, Italian-seasoned bread crumbs, heavy cream, crumbled goat cheese, feta cheese, and chopped rosemary. Mix well to ensure all ingredients are evenly distributed. (5 minutes)

05

Step

Gently lay tomato slices on top of the squash mixture in the casserole dish, slightly overlapping them. Sprinkle the grated Parmesan cheese evenly over the tomatoes, and finish with a generous grind of fresh black pepper. (5 minutes)

06

Step

Return the casserole dish to the preheated oven and bake until the top is golden brown and the casserole is set, about 45 minutes. (45 minutes)

07

Step

Let the casserole cool for a few minutes before serving. Enjoy! (10 minutes)

For a deeper flavor, roast the spaghetti squash whole, cut-side down, until tender before scooping out the flesh and cubing it. This will intensify its natural sweetness.
Feel free to experiment with different cheeses! Gruyere, mozzarella, or provolone would all be delicious additions.
Add a pinch of red pepper flakes for a touch of heat.
If you don't have fresh rosemary, dried rosemary can be used. Use 1 teaspoon of dried rosemary instead of 1 tablespoon of fresh.
