Step

In a large skillet, heat 1 teaspoon of olive oil over medium heat. Add the rinsed quinoa and toast, stirring frequently, until lightly golden and fragrant. (Approximately 2 minutes)

Slowly pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and simmer until most of the liquid is absorbed and the quinoa is partially cooked. (Approximately 12 minutes)

Layer the broccoli florets, chopped kale, and red bell pepper over the quinoa. Cover the skillet again and continue to cook until the quinoa is tender and the vegetables are slightly softened but still retain some bite. (Approximately 8 minutes)

Remove from heat and fluff the quinoa with a fork. Stir in the fresh cilantro and black olives.

Season generously with salt and freshly ground black pepper to taste. Drizzle with the remaining tablespoon of olive oil before serving.

For a richer flavor, toast the quinoa in a dry skillet before adding the olive oil.
Feel free to substitute other vegetables based on your preference and what's in season. Spinach, zucchini, or bell peppers would all be excellent additions.
A squeeze of fresh lemon juice at the end brightens the flavors.
This salad is delicious served warm or at room temperature. It also keeps well in the refrigerator for several days.
