For a softer chapati, you can add a tablespoon of ghee or oil to the dough while kneading. If the dough is too sticky, add a little more flour, one tablespoon at a time. If the dough is too dry, add a little more water, one teaspoon at a time. Make sure the griddle is hot before cooking the chapati, but not so hot that it burns the bread. For best results, serve the chapati immediately after cooking. You can keep them warm in a covered container or wrapped in a clean kitchen towel.
