While the dough rests, prepare the filling. In a medium saucepan over medium-high heat, cook the ground chicken until evenly browned, breaking it up with a spoon. (8 minutes)

Fold the dough over the filling to create a half-moon shape. Pinch the edges together firmly to seal, pleating the edges if desired. (15 minutes)

In batches, carefully place the dumplings in the hot oil and cook until the bottoms are golden brown. (5 minutes per batch)

Pour approximately 1/3 cup of water into the pan. Cover immediately and continue cooking for approximately 5 minutes, or until the water has evaporated and the dumpling surfaces are steamed and translucent. (5 minutes)

For a vegetarian option, substitute the ground chicken with finely chopped mushrooms or tofu.
