Follow The Directions

01

Step

In a large, heavy-bottomed saucepan or Dutch oven, heat the olive oil over medium heat. (2 minutes)

02

Step

Add the chopped onions and sauté until softened and golden brown, stirring occasionally. (8-10 minutes)

03

Step

Stir in the minced garlic and cook until fragrant, about 1 minute.

04

Step

Stir in the red pepper flakes, tomato paste, hot vegetable broth, chopped parsley, salt, pepper, and smoked paprika. (1 minute)

05

Step

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 30 minutes, allowing the flavors to meld and deepen.

06

Step

Gently stir in the drained and rinsed fava beans. (1 minute)

07

Step

Remove from heat, cover, and let stand for at least 10 minutes to allow the flavors to fully marry. The longer it sits, the better it tastes!

08

Step

Serve hot, garnished with a drizzle of extra virgin olive oil and a sprinkle of fresh parsley, if desired.

For a richer flavor, consider using homemade vegetable broth. Chicken broth can be substituted for a non-vegetarian version.
If you prefer a smoother sauce, use an immersion blender to partially blend the stew before adding the fava beans.
A splash of dry white wine added with the broth enhances the dish beautifully.
This dish pairs perfectly with crusty bread for soaking up the delicious sauce.
