Prepare the Artichokes: In a shallow bowl, place the flour. In a separate bowl, beat the egg. Dredge each artichoke heart in the flour, shaking off any excess, then dip into the beaten egg, ensuring it's fully coated. (5 minutes)

Sauté the Artichokes: Heat the vegetable oil in a large skillet over medium heat. Add the dredged artichoke hearts and cook, stirring occasionally, until golden brown and slightly crispy. Transfer the cooked artichoke hearts to a bowl and set aside. (8-10 minutes)

Create the Sauce: Pour out the oil from the skillet and wipe it clean with a paper towel. Return the skillet to the stove and melt the butter over medium heat. Once melted, pour in the lemon juice. Bring to a simmer. Return the artichoke hearts to the skillet and sprinkle with Parmesan cheese. Pour in the sherry. Season generously with salt and pepper. Stir well to combine all the ingredients. (5 minutes)

Reduce and Serve: Using a slotted spoon, transfer the artichoke hearts to a serving dish. Increase the heat slightly and boil the sauce in the skillet until it has reduced and thickened slightly. Pour the reduced sauce over the artichoke hearts. Garnish with fresh parsley and serve immediately. (2-3 minutes)

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the sauce.
Serve immediately to ensure the artichokes retain their crispiness.
If serving over pasta, linguine or spaghetti work particularly well with this dish. Toss the pasta with the sauce before adding the artichoke hearts.
Freshly grated Parmesan cheese is highly recommended for its superior flavor and texture.
