For an even richer flavor, consider browning the chicken thighs in batches to avoid overcrowding the pot.
Feel free to adjust the amount of water depending on how thick you prefer your stew. You can also add a splash of cream or a dollop of sour cream at the end for extra richness.
If you don't have Herbes de Provence on hand, you can substitute with a mixture of dried thyme, rosemary, and savory.
This stew is even better the next day, as the flavors have more time to meld together. Store leftovers in an airtight container in the refrigerator for up to 3 days.
