Follow The Directions

Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a small casserole dish with cooking spray. (5 minutes)

Heat olive oil in a 12-inch nonstick skillet over medium heat. Add the sliced bell pepper and onion. Cook until softened and slightly caramelized, about 5 minutes.

In a medium bowl, whisk together the milk, egg whites, whole eggs, salt, pepper, and cumin until well combined. (3 minutes)

Transfer the cooked vegetables from the skillet to the prepared casserole dish. Pour the egg mixture evenly over the vegetables.

Bake in the preheated oven until the eggs are set and the frittata is lightly golden brown, approximately 30 minutes.

Remove the frittata from the oven and let it cool slightly before slicing into wedges or squares. Serve warm, topped with your favorite salsa.

For an extra layer of flavor, consider adding a sprinkle of shredded cheese (cheddar, Monterey Jack, or a Mexican blend) during the last 5 minutes of baking.
Feel free to customize the vegetables to your liking. Black beans, corn, or diced jalapeños would all be delicious additions.
If you don't have a casserole dish, you can bake the frittata directly in an oven-safe skillet.
