For an even deeper flavor, try adding a tablespoon of Worcestershire sauce to the marinade. If you don't have fresh thyme on hand, you can substitute 1 teaspoon of dried thyme. Marinating for longer than 8 hours is not recommended, as the acid in the vinegar can begin to break down the meat fibers and make it mushy. This marinade can also be used as a glaze during the last few minutes of cooking. Simply brush it onto the meat for a beautiful, caramelized finish.
