For extra crispy bacon, place the broiler pan on a higher rack in the oven. Feel free to experiment with different types of cheese in the waffles, such as Gruyere or Monterey Jack. If you don't have fresh herbs on hand, dried herbs can be substituted. Use about 1 teaspoon of dried herbs for every 1 tablespoon of fresh herbs. Waffles can be made ahead and frozen. Reheat in a toaster oven or oven until warm and crisp. Adjust the amount of maple syrup in the mustard sauce to your preference.
