Follow The Directions

01

Step
5 mins

Gather all ingredients.

02

Step
15 mins

Preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart square baking dish. (5 minutes)

03

Step
5 mins

Cook bacon in a large skillet until crisp, about 8 minutes. Drain on paper towels. When cool enough to handle, crumble bacon. Drain all but 2 tablespoons bacon drippings from the skillet. (15 minutes)

04

Step
1 mins

Add onion to the skillet. Cook and stir until tender, about 5 minutes. (5 minutes)

05

Step
3 mins

Add flour and cayenne pepper to skillet; cook and stir 1 minute. (1 minute)

06

Step
3 mins

Add 2 cups milk to the skillet. Cook and stir until thickened and bubbly, about 3 minutes. (3 minutes)

07

Step
3 mins

Gradually add 1 cup cheese to skillet, stirring until melted. Stir in half of green onions. (3 minutes)

08

Step
10 mins

Place 1/2 cup sour cream in a small bowl. Gradually whisk in about 1/2 cup of hot sauce mixture. Return mixture to the skillet. Return to a simmer. (3 minutes)

09

Step
35 mins

Add half of tots to the prepared baking dish. Top with half of sauce and half of bacon. Top with remaining tots, remaining sauce, remaining bacon, and remaining cheese. (10 minutes)

10

Step
2 mins

Bake until bubbly and cheese on top is lightly browned, 35 minutes. (35 minutes)

11

Step
1 mins

For dill cream, whisk together 1/4 cup sour cream, 1 tablespoon milk, and dill. (2 minutes)

12

Step

Drizzle over the casserole and top with remaining green onions. (1 minute)

For an extra layer of flavor, consider using smoked bacon.
Feel free to substitute the sharp cheddar with another cheese of your choice, such as Gruyere or Pepper Jack.
If you don't have fresh dill, dried dill can be used. Use 1 teaspoon of dried dill in place of 1 tablespoon of fresh dill.
The casserole can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking. Add an extra 10-15 minutes to the baking time if baking from cold.
