Prepare the Liver Mixture: In a food processor, grind the raw liver until it forms a smooth paste. (5 minutes)

Combine Ingredients: In a mixing bowl, combine the ground liver, breadcrumbs, egg, flour, 1/8 teaspoon of salt, and pepper. Mix thoroughly until well combined. The mixture should be moist but not too wet. Add a little more flour if needed. (5 minutes)

Shape the Dumplings: Bring the beef broth to a gentle boil in a large pot. Using a wet spoon or your hands, form the liver mixture into small dumplings, about 1 inch in diameter. (10 minutes)

Simmer the Dumplings: Gently drop the dumplings into the simmering broth, being careful not to overcrowd the pot. (5 minutes)

Cook to Perfection: Reduce the heat to low, cover the pot, and simmer the dumplings for 25 to 30 minutes, or until they are cooked through and firm to the touch. (30 minutes)

Season and Serve: Taste the broth and adjust seasoning with the remaining 1/8 teaspoon of salt and more pepper, if needed. Serve the liver dumplings hot, either in the broth as a soup, or ladled over buttered noodles with fried onions.

For a richer flavor, sauté a finely chopped onion and a clove of garlic in butter before adding the beef broth.
To test for doneness, remove one dumpling and cut it in half. It should be cooked through with no pink remaining.
Leftover liver dumplings can be stored in the refrigerator for up to 3 days. Reheat gently in the broth or in a separate saucepan.
For gluten-free option, substitute the flour with gluten-free all-purpose flour.
