For a richer flavor, try using peanut oil instead of vegetable oil. If you don't have dry sherry, a splash of rice vinegar can be substituted. Don't overcook the shrimp! They should be pink and opaque, but still tender. Serve immediately over rice or noodles for a complete meal.
