Generously rub the Hawaiian sea salt all over the roast, ensuring every surface is well-seasoned. Pierce the meat deeply and repeatedly with a large fork or a narrow knife to allow the flavors to penetrate. Drizzle the liquid smoke evenly over the roast. (5 minutes)

Close and lock the Instant Pot lid. Select high pressure and set the timer for 120 minutes. Allow 15-30 minutes for the pressure to build. (145 minutes)

Once the cooking time is complete, allow the pressure to release naturally for about 15 minutes. (15 minutes)

Carefully unlock and remove the lid. Transfer the roast to a large plate or cutting board. (2 minutes)

If desired, separate any excess fat from the cooked roast. Using two forks, gently shred the pork into bite-sized pieces, creating that signature pulled pork texture. Transfer the shredded pork to a serving bowl. (10 minutes)

Remove any remaining fat from the cooking liquid using a fat separator. Drizzle the strained, flavorful liquid over the shredded pork to keep it moist and enhance the smoky flavor. (5 minutes)

For an even more intense smoky flavor, consider adding a small amount of smoked paprika to the salt rub.
If you prefer a richer flavor, use a pork shoulder (Boston butt) instead of pork loin. You may need to increase the cooking time by 15-20 minutes.
