For a vegetarian version, omit the ham hock and add 1 teaspoon of smoked paprika to enhance the smoky flavor. Adjust the amount of red pepper flakes to your preference. For a milder flavor, reduce or eliminate them altogether. If you don't have collard greens, you can substitute with kale or mustard greens. For a richer flavor, use chicken broth instead of vegetable broth. Leftovers can be stored in the refrigerator for up to 3 days. The flavors will meld together even more overnight!
