Follow The Directions

01

Step

In a large, microwave-safe bowl, combine the butter and maple syrup. Microwave in 30-second intervals, stirring in between, until the butter is completely melted (approximately 1 to 1 1/2 minutes).

02

Step

Remove the bowl from the microwave and stir in the vanilla extract, cinnamon, salt, and nutmeg until well combined.

03

Step

Add the oats, almonds, coconut, and flax meal to the mixture. Stir until everything is evenly coated.

04

Step

Generously grease a standard muffin tin with nonstick baking spray that contains flour.

05

Step

Divide the oat mixture evenly among the muffin cups, using about 2 heaping tablespoons per cup. With slightly wet hands, firmly press the mixture into the bottom and up the sides of each cup to create a well-defined cup shape.

06

Step

Place the muffin tin in the refrigerator to chill for 15 minutes. This helps the cups hold their shape during baking.

07

Step

Preheat your oven to 350 degrees F (175 degrees C).

08

Step

Bake the chilled granola cups in the preheated oven until the edges turn a beautiful golden brown color (approximately 25 to 30 minutes).

09

Step

Remove the muffin tin from the oven and allow the granola cups to cool completely in the pan at room temperature (about 30 minutes). This allows them to firm up and makes them easier to remove.

10

Step

Once cooled, gently use an offset spatula or butter knife to carefully pop the granola cups out of the muffin tin. Fill each cup with your favorite yogurt and top with fresh berries. Serve immediately for the best texture!

For a richer flavor, try using brown butter instead of melted butter.
Experiment with different spices like cardamom or ginger.
Add dried fruits like cranberries or raisins for extra sweetness and chewiness.
Store unfilled granola cups in an airtight container at room temperature for up to 3 days.
