Follow The Directions

01

Step

Position an oven rack in the upper third of the oven and preheat the broiler.

02

Step

In a mixing bowl, whisk together the eggs and egg whites until smooth. Add the parsley, salt, and pepper, whisking until evenly combined. Set aside.

03

Step

Heat the olive oil in a 10-inch cast-iron skillet over medium heat. Add the red onion, salt, and pepper. Cook, stirring occasionally, until the onion softens and becomes translucent (approximately 5 minutes). Stir in the halved grape tomatoes and cook for another minute. Incorporate the cooked Swiss chard, stirring until heated through. Pour the egg mixture into the skillet, cover, and cook until the edges of the eggs are set (about 5 minutes).

04

Step

Uncover the skillet and sprinkle the grated Parmesan cheese evenly over the frittata. Place the skillet under the preheated broiler until the cheese is golden brown and the center of the frittata is set (approximately 2 minutes).

05

Step

Remove the skillet from the oven and let the frittata stand for a few minutes before serving (about 3 minutes).

Feel free to experiment with different types of cheese. Gruyere, feta, or goat cheese would all be delicious additions.
For a vegetarian option, consider adding sautéed mushrooms or roasted red peppers.
If you don't have a cast-iron skillet, you can use an oven-safe non-stick skillet. Just make sure it can withstand the broiler's heat.

I found that 2 minutes under the broiler was too long for my oven. Next time, I'll check it after 1 minute.
