Transfer the cooked bacon to a plate lined with paper towels to drain excess grease, but reserve the flavorful bacon drippings in the skillet. Once cooled slightly, roughly chop the bacon and set aside.

Sauté the Greens: Add the drained, cooked beets and the chopped red Swiss chard to the skillet with the reserved bacon drippings. Cover the skillet and cook over medium heat until the chard wilts and becomes tender. (Approximately 3-5 minutes)

Combine and Finish: Stir in the chopped bacon and frozen peas to the beet and chard mixture. Continue cooking until the peas are heated through and tender-crisp. (Approximately 5 minutes).

For an enhanced flavor profile, consider roasting the beets instead of boiling. Roasting brings out their natural sweetness.
If Swiss chard is unavailable, spinach or kale can be used as substitutes. Adjust cooking time accordingly.
