Follow The Directions

01

Step

Preheat an outdoor grill for medium-high heat and lightly oil the grate. (5 minutes)

02

Step

Carefully cut each chicken breast horizontally from one side through the middle, stopping about 1/2 inch from the opposite edge. Open the chicken like a book. (5 minutes)

03

Step

In a large bowl, combine the cream cheese, feta cheese, diced tomato, chopped black olives, finely chopped onion, and chopped fresh spinach. Mix well until thoroughly combined. (5 minutes)

04

Step

Spoon the cheese mixture generously onto one side of each opened chicken breast. Fold the other side over the filling to enclose it. Place each stuffed chicken breast on a piece of aluminum foil. (10 minutes)

05

Step

Cook the chicken breasts on the preheated grill until they are no longer pink in the center and the juices run clear when pierced with a fork, approximately 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

For best results, use high-quality feta cheese. Its tangy flavor is crucial to the dish.
Feel free to experiment with other fillings, such as sun-dried tomatoes, artichoke hearts, or roasted red peppers.
Serve the stuffed chicken with a classic Greek salad, roasted vegetables, or a side of couscous for a complete and satisfying meal.
To prevent the filling from oozing out during grilling, ensure the chicken breasts are tightly sealed. You can secure them with toothpicks if needed.

I didn't have any black olives, so I used Kalamata olives instead. It was still delicious!
