Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C). (5 minutes)

02

Step

Melt butter in a large skillet over medium heat. Add onion, celery, carrot, garlic, thyme, salt, and pepper; cook, stirring often, until onions are softened and translucent. (5-7 minutes)

03

Step

Add French onion soup and wine, and bring to a simmer over medium heat. Simmer, undisturbed, until reduced and slightly thickened. (2-3 minutes)

04

Step

Stir in sour cream, mayonnaise, and mustard, and return to a simmer. Add 1 cup Gruyère, and cook, stirring constantly, until completely melted and combined. (1 minute)

05

Step

Remove from heat, and fold in chicken.

06

Step

Transfer to a 9x13-inch baking dish. Sprinkle croutons evenly over chicken mixture; sprinkle evenly with remaining Gruyère cheese.

07

Step

Bake in the preheated oven until bubbling and cheese is melted. (12-15 minutes)

08

Step

Let rest 10 minutes before serving. Garnish with additional thyme and pepper.

For a deeper flavor, caramelize the onions for a longer period. Watch carefully to prevent burning.
If you don't have rotisserie chicken, you can use about 1 1/2 pounds of cooked chicken breast, shredded.
For a richer casserole, use heavy cream instead of sour cream and mayonnaise.
Feel free to experiment with different cheeses. Fontina or provolone would be delicious substitutes for Gruyère.
Prepare the casserole ahead of time and bake it just before serving. Assemble up to the point of baking, cover tightly, and refrigerate for up to 24 hours. Add an additional 5-10 minutes to the baking time if starting with a cold casserole.
