In a shallow bowl, whisk together the egg white and water until lightly frothy. Place the flour on a separate plate. In a third shallow bowl, combine the panko bread crumbs, Parmesan cheese, basil, oregano, salt, and pepper. Mix well to ensure even distribution of the spices. (5 minutes)

Dredge each chicken breast in the flour, shaking off any excess. Dip it into the egg white mixture, allowing the excess to drip off. Then, gently press the chicken into the seasoned panko crumbs, ensuring both sides are fully coated. Spray both sides of the breaded chicken breasts with olive oil cooking spray. (10 minutes)

Place the prepared chicken breasts onto a non-stick baking sheet. Bake in the preheated oven for 10 to 12 minutes, or until golden brown and cooked through. Remove from oven and immediately sprinkle the mozzarella cheese evenly over the chicken. Return to the oven and bake for another 1 to 2 minutes, or until the cheese is melted, bubbly, and lightly browned. (12 minutes)

Serve immediately, topped with the warm marinara sauce and an extra sprinkle of grated Parmesan cheese. Garnish with fresh basil, if desired.

For best results, use high-quality marinara sauce, either homemade or store-bought.
Pounding the chicken breasts to an even thickness ensures even cooking and a more tender result.
Panko bread crumbs provide a superior crispy texture compared to regular bread crumbs.
Do not overcrowd the baking sheet, as this can steam the chicken instead of allowing it to crisp up. If necessary, bake in batches.
For a richer flavor, substitute half of the mozzarella cheese with provolone or fontina cheese.
